(Mid-Autumn Festival 2013) Mooncakes from Jiang-Nan Chun, Four Seasons Hotel Singapore

Chef Alan Chan from Jiang-Nan Chun, Four Seasons Hotel Singapore, is best known for his creative enthusiasm in tandem with drawing on traditional roots.

This Mid-Autumn Festival, expect bold and inventive flavours in Chef Chan’s new range of mini snow skin mooncakes, yet traditionalists can still seek comfort in familiar favourites.

Elegantly packaged in an auspicious colour scheme of red and gold, the underlying mooncakes are certainly no less sophisticated in terms of both quality and taste.

Pandan and White Lotus Paste with Melon Seeds

Reigning amongst the top few in the quality of lotus paste, the smoothness and less cloying density of it makes it an instant pleaser.

New varieties worth trying are the Pandan and White Lotus Seed Paste with Melon Seeds, and the Silver Lotus Paste with Cassia Flowers, Oolong Tea and Melon Seeds.

Silver Lotus Paste with Cassia Flowers, Oolong Tea and Melon Seeds

The scent of cassia flower and the aroma of oolong tea is subtly infused into the smooth lotus paste, creating depth and dimension to set it apart from the typical lotus paste mooncake.

Other popular options include the Silver Lotus Paste with Double Yolks and Melon Seeds, and the Silver Lotus Paste with Honey and Pine Nuts.

Mini Snowskin – Macadamia Nut Chocolate Royaltine Paste

Chef Chan most successfully translates his creative artistry in the Mini Snowskin Mooncake creations.

A particularly outstanding one for me is the Mini Snowskin with Macadamia Nut Chocolate Royaltine Paste. You will be craving for a second one soon after relishing the final bite.

Mini Snowskin – Raspberry-Rum and Chocolate Paste

Alcohol lovers who want to enjoy a hint of tartness simultaneously can go for the Mini Snowskin with Raspberry-Rum and Chocolate Paste –this variety will too satisfy the needs of chocolate lovers.
