RWS Food Affair: A 9-day showcase of 6 Celebrity Chefs (14 to 22 September 2013)

The inaugural RWS Food Affair takes place from 14 to 22 September 2013, showcasing the prowess and expertise of six celebrity chefs with their specially crafted menus exclusive to this gastronomic event.

The climax of the RWS Food Affair is an opulent 6-course dinner in a magnificent setting at S.E.A Aquarium, happening on 18 September, which features the cuisines of Chef Joël Robuchon, Chef Sam Leong from Forest, Chef Li Kwok Kwong from Feng Shui Inn, Chef Cat Cora from Ocean, Chef Douglas Tay from Osia and Executive Pastry Chef Kenny Kong, who each designed a course for this dinner.

The 6-course set dinner is priced at $288++, which includes free flow Ayala Brut Majeur NV Champagne for pre-dinner cocktails and free flow Penfolds Bin 2 Shiraz Mourvrdre & Penfolds Koonunga Hill Autumn Riesling for dinner.

I attended a media preview, which brought us to four participating restaurants to get a peek of the dishes that are going to be served during the RWS Food Affair. The food trail kick-started at L’Atelier de Joël Robuchonthe more relaxed sibling outlet to the chichi Joël Robuchon Restaurant.

Charming our rumbling stomachs are warm and crusty house-baked breads.


Foie Gras Custard with Red Porto Wine & Parmesan Foam

Part of the 6-course dinner set menu at L’Atelier de Joël Robuchon ($180++) is the Foie Gras Custard with Red Porto Wine & Parmesan Foam, an amuse bouche boasting an impeccable display of flavour combination.


Le Crabe – Seasonal Crab Meat on Thin Layers of Turnip with Sweet & Sour Vinaigrette

The appetiser, Le Crabe, also part of the 6-course dinner set menu at L’Atelier de Joël Robuchon, wowed us with its visually impactful presentation –a fastidious layering of two paper-thin slices of turnip with fresh crabmeat that’s accented with a sweet and sour vinaigrette.


Steamed New Zealand Cod with Yuzu Mushroom Sauce

Part of Forest森’s 6-course dinner ($148++), the Steamed New Zealand Cod with Yuzu Mushroom Sauce blew me away with its buttery tenderness and pristine freshness.

For those who not only want to taste it, but also pick up cooking tips on how to prepare this dish, I highly encourage you to join the Masterclass & Lunch with Sam & Forest Leong at Forest森 on 14 Sep, from 12pm to 4pm, which includes a 4-course lunch, at $160 nett.


Kurobuta Pork Belly & Fried Octopus with Sauerkraut Puree, Cabbage Roll & Mustard

Another restaurant I’ve been yearning to visit is Ocean Restaurant by Cat Cora. Being a huge fan of Iron Chef America, it’s a huge privilege to be able to dine at a restaurant that represents this prominent chef’s cooking. During this period, lucky diners may also catch a glimpse of the TV-star in person.

The Kurobuta Pork Belly & Fried Octopus with Sauerkraut Puree, Cabbage Roll & Mustard, part of the 5-course dinner at Ocean Restaurant ($158++), was one of my favourite dishes that evening. The pork belly is cooked in a sous-vide bath for 12 hours overnight before being seared, which results in tender succulence accompanying a delightful crackling skin. Supporting components include addictive crispy crumbs and a sauerkraut puree that’s been cooked with apple.


Sweet Temptation – Yuzu Mango Cremuex, Gula Melaka Streusel, Milky Lemongrass Sorbet

The Sweet Temptation dessert will be served as part of the RWS Celebrity Chefs Dinner, a 6-course dinner ($288++ per person) on 18 September. I love the contrasting elements on the plate, the variations of textures, sweetness and tartness.
