Braised Superior Bird’s Nest with Crabmeat and Crab Roe

Part of one of the set menus, the pampering Braised Superior Bird’s Nest with Crabmeat and Crab Roe brims with top-quality ingredients, boasting clean flavours and luscious textures.

Salted Egg Lobster and Sautéed Fillet of Lobster

Turbot Fish “Yu Sheng Loh Hei” Platter ($68/$128, available for takeaway)

Auspicious takeaway items are available from 13 January to 14 February 2014.

Yu Sheng is available in 5 varieites: Salmon “Loh Hei” Platter ($52/$96), Ikan Parang “Loh Hei” Platter ($52/$96), Turbot “Loh Hei” Platter ($68/$128), Abalone “Loh Hei” Platter ($88/$138) and Vegetarian “Loh Hei” Platter ($45/$80).

Verdict: Flavour and taste remain traditional; the dressing does not overpower the pristine freshness of the fish.

Elevate the Yu Sheng to a sumptuous pinnacle by adding extra ingredients: Salmon ($20), Ikan Parang ($20), Crispy Salmon Fish Skin ($20), Turbot ($32), Shredded Abalone ($48), Lobster ($28), Crackers ($5) and “Loh Hei” ($36).

Stewed “Eight Treasures” Chicken with South African 5-head Abalone and Sea Cucumber ($298; available for takeaway)

Available for takeaway, the Stewed “Eight Treasures” Chicken with South African 5-head Abalone and Sea Cucumber is an effortful creation that flourishes with intense and welcoming flavours. The chicken is firstly fried, with all the ingredients such as barley, chestnut and lotus seed encased within, before stewing for 2 hours to reach tender and flavourful goodness.

Water Chestnut Cake with Osmanthus Fragrance ($42 per order, available for takeaway); Pan-fried Nian-gao ($42 for Traditional Nian Gao, available for takeaway)

Desserts available for takeaway include the Water Chestnut Cake flecked with fragrant osmanthus bits and chunks of crunchy water chestnut throughout, and Traditional Nian Gao that’s soft and light. My favourite way of eating Nian Gao is pan-frying with a coating of egg batter.
