Truffle Treasures at Prego, Fairmont Singapore (1 November 2013 to 31 January 2014)

The aroma of truffles is distinctive and alluring; it is alleged to galvanise the palate and senses. Truffle-infused dishes are head-turners at restaurants –it’s been tested on me and proven true. There is a small minority who have no liking for truffles, but the majority would gladly acquire their portions.

The season of truffle gives Prego at Fairmont Singapore an occasion to bring forth a luxurious line-up of truffle-infused dishes from 1 November 2013 through January 2014.

Indulge in more than 10 truffle-inspired dishes from various regions such as Piedmont, Tuscany and Umbria, in not only the appetiser and hand-made pasta sections but also the dessert section.


Truffle Ricotta Cheese with Shaved White Truffle

You begin with a basket of house-baked breads accompanied by a Truffle Ricotta Cheese with Shaved White Truffle spread. Truffle makes everything taste good. I want to dip everything into this.


Grilled Tomino Cheese, Endive Salad, White Truffle ($38)

The uncomplicated dish of grilled Tomino cheese topped with white truffle and sided with endive salad and toast is a crowd-pleaser. This dish succeeds in mere virtue of the quality of ingredients.


Tartare di Manzo, Acciughe, Uova Quaglia, Tartufo Bianco – Angus Beef Tartar, Anchovy, Quail Eggs, White Truffle ($40)

A personal pick would be the Tartare di Manzo, Acciughe, Uova Quaglia, Tartufo Bianco from Piedmont. Succulent chunks of Angus beef tartar is combined with anchovy and quail egg yolk, topped with shavings of white truffle –delightful from start to finish.


Polentia Bianca, Roasted Foie Gras, Wild Mushrooms, White Truffle ($36)

The dish of Polentia Bianca, Roasted Foie Gras, Wild Mushrooms and White Truffle from Tuscany is a must-order, especially for anyone who loves foie gras. I totally wouldn’t share this if I didn’t have to!


Risotto al Tartufo Bianco – White Truffle Risotto ($75 for entrée portion, $40 for appetiser portion)

Truffle and risotto is a perfect match. This dish from Piedmont satisfies with the right doneness and creaminess, wafting with earthy aroma –a comforting dish elevated with generous shavings of white truffle.


Uova da Raviolo – Spinach, Parmesan, Ricotta Ravioli, Poached Egg, White Truffle ($38)

The artfully executed Uova da Raviolo encases flowing egg yolk sitting atop a heap of spinach, Parmesan and ricotta filling, topped with shaved white truffle, and surrounded by a sensuous sea of beefy red wine sauce. Every bite is nothing short of spectacular.


Wood Oven Roasted Veal Chop, Kale, Black Truffle Potatoes, White Truffles ($48)

Dedicated carnivores can go for the wood oven roasted veal chop, served on a bed of kale, sided with black truffle-infused potatoes and topped with shavings of white truffle. The meat is inordinately tender.


Cotechino and Black Truffle Stuffed Whole Quail, Nebbiolo Sauce, Shaved White Truffle ($46)

One of the most memorable dishes for me would be the sumptuous roasted whole quail that’s stuffed with Cotechino (Italian sausage meat) and black truffle, served with Nebbiolo sauce, barley risotto and topped with shaved white truffle.


Black Truffle Meringue with Hazelnut Truffle Soil, Citrus Mint Cremeux and Passion Fruit Foam ($30)

Truffle and dessert may not strike one as compatible, but Chef Antonio Facchinetti and his team of chefs broke boundaries and created palatable desserts that are set to win hearts.


Poached Rhubarb with Wine Jelly, Vanilla Crema, Black Truffle Ice Cream and Cocoa Nibs ($30)

The Poached Rhubarb with Wine Jelly, Vanilla Crema, Black Truffle Ice Cream and Cocoa Nibs is highly recommended. The combined elements of fruity, custardy and creamy textures work well together, but I am especially fond of the black truffle ice cream that leaves a deep impression.

In December 2013 and January 2014, Black Truffle takes the limelight at Prego’s seasonal menus. Positively drool-inducing dishes include Duck Confit served with Sautéed Potatoes, Foie Gras, Fried Egg and topped with shaved Black Truffles, Seared Scallops with Fennel and Black Truffle Cream, and Osso Bucco Ravioli that comprises veal shanks braised in a black truffle broth.
