Ku Dé Ta Restaurant makes its way to the list of best brunch buffets in Singapore with its impeccable spread and unbeatable environs. Perched on the 57th floor of Marina Bay Sands, it is where you’d dream of spending every other languid weekend at.
Available on Saturdays and Sundays, the Weekend Brunch ($98), includes juices, coffees, teas, smoothies, milkshakes and soft drinks, on top of a stunning buffet spread and an amazing a la carte menu that you’re free to order as much as you can possibly stuff yourself with. For alcohol devotees, go for the Cocktail & Champagne Brunch ($178) that’s inclusive of Louis Roederer Bruit Premier, selection of white, red & rosé wines, cocktails, sangrias and draught beers.
Spanning from 11am till 3.30pm, diners can feast leisurely at the slowest of pace till their hearts content.
The crowds start streaming in at noon, so be sure to make reservations or arrive early to secure a table.
On a side note, the spread is effortlessly photogenic, which sets the perfect circumstances for photography enthusiasts to hone their photography skills.
Manuka Smoked Salmon with Scrambled Eggs and Toasted Rye Bread
The a la carte brunch buffet menu comprises over 20 savoury items. As one would expect, there are the quintessential egg-dominated items, which include the Classic Benedict, Goat Cheese & Tomato Omelette, Mushroom & Mizuna Leaf Omelette, Crab Benedict, Steak & Eggs and Smoked Salmon with Scrambled Eggs.
Mushroom & Mizuna Leaf Omelette
For a hearty portion, egg lovers can have their eggs done to their liking (scrambled, poached or fried), which will be accompanied by smoked bacon, beef sausage, fingerling potato wedges, sauté mushroom and grilled roma tomato served with toasted focaccia bread.
Goat Cheese & Tomato Omelette
The strong, assertive and pungent taste of goat cheese prevails in the Goat Cheese & Tomato Omelette without being too overwhelming.
Crab Benedict
Not all palates will consent to the curry-spiced crab cake –even those who grew up eating curries might experience a culture shock. I felt the curry spices did not complement the crab at all –but palates differ.
Soup of the day
Soup of the day was the earthy Cream of Mushroom Soup drizzled with mesmerising truffle oil.
Chicken Caesar Salad
The Chicken Caesar Salad received raves from my other half, whom enjoyed the tender substantial pieces of chargrilled chicken breast so much that he ordered another portion –only to be served a less impressive portion scattered with pitiful morsels of chicken. Maybe it was the kitchen hinting that we should move on to try a wider variety rather than to stick with the same few favourites. Heh!
Tomato Pizza
The unassuming vegetarian Tomato Pizza dazzles with top-notch quality, comprising oven-dried tomatoes, buffalo mozzarella, roasted garlic and basil leaves. The crust is not paper-thin; hence our tummies could only fit two slices at most. To avoid food wastage, order this only if you’re dining in a group. The other pizza option is the Spicy Beef Pizza that comes with minced Angus and wagyu, caramelised onion, coriander and siracha chilli –saliva-inducing but I didn’t have stomach space for that.
Carbonara
The Carbonara puts a grin on my face, and I won’t see why it won’t on yours with the chunky strips of pancetta (salt cured pork belly meat) generously scattered amid the flavour-coated linguine pasta that’s enriched with Parmesan cheese, accented with white wine, and aromatised with a confit of shallot and garlic.
Arrabbiata
The Arrabbiata is a delicious vegetarian pasta option that comprises penne pasta, spicy tomato sauce, pitted olives and herb-scented oil.
Chicken Schnitzel Club Sandwich
The panko-coated chicken breast turned out a tad dry. The toasted rye bread deserves a mention; it’s crusty on the surface and fluffy and moist within. The crisp truffle fries the come alongside are very well sought-after.
Other mains include the Black Angus Burger and Laksa, which were highly raved among food reviewers.
Hong Kong Style Egg Noodle with Chicken Char Siew
The Hong Kong Style Egg Noodle with Chicken Char Siew exceeded my expectations by miles. I wouldn’t expect this western-oriented kitchen to wok up such a flavourful rendition of Hong Kong Noodle that could rival the top Chinese restaurants. The chicken char siew is superbly tender and succulent.
Quarter Dozen Jet-Fresh Oysters on Ice
Under the delicacies section, the oysters, topped with ikura, lemon emulsion, cucumber jello and micro herbs, are indeed unbeatably fresh.
Pan-fried Foie Gras & Curry Bread
The Pan-fried Foie Gras & Curry Bread is a mega highlight for me. The curry bread didn’t entirely entice me, but I enjoyed the crunch beneath that fatty perfectly seared foie gras, and the fruity concoction of Nashi pear and Fiji apple alongside golden raisins. Foie gras – it’s either you love it or you hate it – and those who love it will not be able to resist the idea of unlimited orders.
Foccacia French Toast with Sour Cherry Compote and Vanilla Whipped Cream
Brunch will not be complete without French toasts, pancakes and waffles. The thick Foccacia French Toast, sprinkled with a thin layer of sugar crystals atop, screams ‘bite into me’.
American Style Pan Cakes with Blueberry, Caramelised Almond and White Chocolate Cream
Strawberry Yogurt Pot
Judging too early, I had thought the most I would consume out of the Strawberry Yogurt Pot would be one spoonful at most, but turns out I finished the entire pot (minus one spoonful that my other half had to fight for). The vanilla-infused Greek yogurt is sweetened with honey, doused in strawberry compote, topped with fresh strawberry and delightfully crunchy flakes.
Classic Waffle
My other half and I agreed that the seductively fragrant waffle is one of the best we’ve had at brunch buffets. If only we had the stomach space for more. This calls for a re-visit!

Lychee Vanilla Shake
The Lychee Vanilla Shake composed of lychee juice and vanilla ice cream gets my vote amongst the smoothies and shakes.

Now that I’m done with the a la carte items, I shall start my positive raving of the buffet spread.
Variety matched with quality is their best trait.
