New lunch menu at Ocean Restaurant by Cat Cora

Ocean Restaurant by Cat Cora, a restaurant nestled within the perimeters of one of the world’s largest aquarium, S.E.A. Aquarium at Resorts World Sentosa (RWS), unites all ardent fans of .

The restaurant also owes its popular to the stunning backdrop of over 100,000 marine animals occupying the Open Ocean Habitat, making it one of the most sought-after dining destinations in Singapore.

Chef Cat Cora took a trip down to Singapore early this May to see the launch of the new 4-course lunch menu. She also shared some of her recipes during intimate cooking demonstrations held at Forest, which I have shared in my other post.

Kingfish Tartare

For starters, diners have the option of either the Kingfish Tartare or the White Onion Soup. My fondness for all things piscatorial made the decision-making process easier, although I secretly wished I could have both.

Served with a crisp rice cracker, refreshing elements that nestle on the bed of kingfish tartare include watermelon, passionfruit and tomatillo ice.

Pan Seared Glacier 51 Toothfish

The first main course gives you the option of either the toothfish or barramundi. The simple but divine Crispy Skin Barramundi is served with parma ham floss and olive oil mashed potato, while the Pan Seared Glacier 51 Toothfish is paired with a light yuzu-soy reduction, mentaiko, crispy garlic and scallion, sporting Asian accents.

Braised-Seared Beef Short Rib

The second main course offers two meat options –beef and duck. Japanese sweet potato, caramelised hazelnut and pomegranate molasses accompany the Crispy Boneless Confit of Duck Leg, while the fork-tender Braised-Seared Beef Short Rib sits on a nest of sautéed pea vine and king oyster mushroom, dressed in a soya and black truffle vinaigrette.

Crémet D’anjou

The unassuming dessert of Crémet D’anjou, essentially cheese curd dusted with icing sugar and served with fresh berries, caught me by surprise with its sweetness and light texture.

This 4-course lunch menu is available daily, from 11.30am to 2.30pm.
