Buffet Alert: Turkish Delights at AquaMarine, Marina Mandarin Singapore (1-31 October 2013)

This October, AquaMarine presents an array of authentic Turkish delights, curated by two renowned Turkish guest Chefs Ahmet Akpinar and Zekeriya Saygin, who have a total of 40 years of culinary experience combined.

Available for lunch and dinner, the sumptuous buffet spread includes a varied selection of authentic Turkish favourites on top of an international spread that includes sashimi, fresh crustaceans and more.


White Beans with Pastrami (Pastirmali Kuru Fasulye)

Turkish appetisers include Coban Salatasi (Shepherd’s salad), Taze Fusulye (Turkish Green Beans), Turkish Kasar Cheese and Tulum Cheese served with dried fruits, strawberries and nuts.

This salad, presumably thinly sliced smoked eggplant tossed with yogurt, is light, refreshing, and a definite a must-try.

Mains include Izmir Kofte (Meatball Casserole), Levrek Bugulama (Baked Seabass), Roasted Whole Baby Lamb with Spiced Rice, Baby Ganoush, Yogurt and Chutneys, Turkish Kebab and Chicken Sharwana with Raita and Turkish Flat Bread.

The kebabs station is a highlight. A massive hunk of meat is skewed on a metal rod and slow-roasted on a vertical rotisserie cooker, carved and distributed upon request.


Sultan Delight – Hunkar Begendi

Amongst AquaMarine’s triumphant array of Turkish delights, I’ve uncovered my favourite Turkish dish –the Sultan Delight. A bed of smooth and creamy potato puree is topped with chunks of lamb that has been stewed long enough to be ridded of its gamey odour. This dish boasts the hallmarks of wonderful flavours and comforting textures.

This is a great opportunity to get to know more about Turkish cuisine, and discover new flavours and taste sensations. The sweet section didn’t send my pulse racing like the savoury items did, but it sure was an eye-opener, being able to sample such a diverse range of Turkish desserts.

To add on to the Middle-Eastern furore, a Turkish cultural band is invited to perform daily at Marina Mandarin’s atrium lounge.
