An exquisite and one-of-a-kind mooncake by Torte

It is just a few more days to the Mid-Autumn Festival! Mooncakes are all the hype and in abundance now –you see them everywhere, from hotel atriums to restaurants; from cafés to independent bakeries; even the homemakers’ kitchens are not spared.

It’s amazing how Mid-Autumn Festival have evolved over the years, from a traditional moon-gazing affair to a feast of varied flavoured mooncakes, and slowly the occasion will turn into a spread of the most avant-garde mooncakes. Modern chefs no longer follow age-old recipes to please the traditionalists; they have to up the ante every year to keep up with the newfangled palates.

Torte’s Yuzu-infused Snowskin with White Lotus and Crème de Marron is one inspirational creation that left the deepest impression.

Mooncakes are usually cut into small wedges, and eaten with the accompaniment of Chinese tea. For this special mooncake, you can pick it up whole, and relish it, bite after bite. Once you take that first bite, you won’ be able to resist the rest of it. And instead of Chinese tea, English breakfast and Earl Grey tea complement this mooncake best.

Crème de Marron is a sweet chestnut cream that hails from France. The pronounced nutty flavour blends beautifully with the fragrant lotus paste –not only is it flavour enhancing, it also adds a smoother texture to the filling. Unlike typical mooncake-making that uses oil to attain that smooth silky texture, this step need not be applied here at all.

The yuzu-infused snowskin is subtly scented without an excessive citrusy hit. On its own, the yuzu flavours are barely detectable. The magic happens when the filling and snowskin is consumed in a single bite; an unconventionally wonderful taste sensation intrigues your palate and asks you for another bite, which follows through with a delightful yuzu aftertaste.

To maintain its exclusivity, Torte will bake only 150 boxes. The 151st box will have to wait till next year. Chef Jason from Torte changes the flavour of his mooncakes every two years. The sought-after Mini Snow-Skin Chocolate Torte Mooncake in 2011 has ceased to exist. In the following year, a new flavour will be introduced, and you will never see the existence of this treasured mooncake anymore.

Cheesecake

I prefer baked cheesecakes to non-baked ones. The cheesecake here is baked to the ideal texture –moist without being overly dense. What I love most is the thickness of the cracker base.


Strawberry Cheesecake

This Strawberry Cheesecake, however unassuming it looks, is one of the best, if not the best strawberry cheesecake I’ve had in a long while. It is creamy without being too heavy, light but firm enough to hold its shape.
