Looking for an easy and fail-proof recipe this Halloween? Try whipping up this Pumpkin and Capsicum Soup. It is a healthier alternative to cream-based soup, while still possessing a thick and rich consistency. Capsicum adds a kick to the naturally sweet pumpkin, while tomatoes add a tangy accent.
- 2 small pumpkins, peeled & cut into large chunks
- 1 large onion, peeled and sliced
- 2 cloves of garlic, peeled and chopped
- 1 large red capsicum, cut into chunks
- 2 tomatoes, quartered
- 2 carrots, peeled and diced
- 2 tbsp olive oil
- 1 tbsp butter
- Salt and freshly ground black pepper
- 500ml chicken stock
Add olive oil and butter to a heated deep-pan. Sauté onions till they turn slightly translucent. Add garlic and sauté till fragrant. Add capsicum, carrots and tomatoes in this order. You can add a touch of salt at this point, but do not over season. Add pumpkin chunks after a couple of minutes and stir-fry for another 2 minutes. Add chicken stock. If ingredients are not fully submerged in liquid, add some water. Cover with lid and let everything cook down till carrot and pumpkin chunks are soft. Season with salt and pepper to taste. Allow it to cool for 10 minutes. Transfer it to a deep pot. Place Bamix Magicwand in the mixture before operating it to prevent splattering. It has two speed settings. Start slow and then switch to the high speed once you’re confident enough. Tilt it at an angle and move the wand around to blend everything up to a puree. The duration of blending depends on your desired consistency. Spend a little more time if you prefer a smooth consistency. Before serving, give it a touch of freshly ground pepper. I also sprinkled on some parsley flakes for garnishing.
