Sunday Brunch Buffet at The Knolls of Capella Singapore

Brunch is one singular meal of the day that makes me radiate enthusiasm. Part of the charm is about waking up late and having breakfast food at lunch. It could be a simple afternoon of café-sitting, or it could be a luxurious affair like having a buffet at The Knolls of Capella Singapore.

The Mediterranean spread at The Knolls reveals praise-worthy virtue –the standard of food speaks for itself. Highlights include fine-cut meats at the live station, foie gras-something-of-the-day presented on wooden boards alongside dainty savouries, freshly shucked oysters in a few varieties, and more.

Apart from pleasures for the palate, diners can look out to the serene environ surrounded by lush foliage. The pool entices one to jump straight into it.

A sophisticated brunch beckons.

The spread encompasses thoughtfully constructed salads, house-baked breads (the beetroot cheddar roll was fabulous, as was the squid ink with gorgonzola roll), quiches (bacon onion and onion mushroom), mains prevalent at live stations (think: whole roasted baby pig, Capella French Peking duck station and pasta station just to name a few), a wide selection of cheeses, and an extensive dessert spread that will blow your socks off.

Potato and Lobster Salad

Making an impact in the appetiser department is the Potato and Lobster Salad –the generous pieces of fresh lobster (as you can see in the picture) spells out the reason why.

Savoury bites to keep conversations going include the Brioche with Foie Gras Terrine, Smoked Haddock with Baby Beetroot Roll, Horseradish Bisque Custard with Caviar and Croutons, and Mediterranean Filo Tartlets.

Poached Hokkaido Scallop with Truffle

What had me going for seconds and thirds is the Poached Hokkaido Scallop with Truffle.

Waffle with Poached Egg, Hollandaise Sauce and Shaved White Truffle

What is brunch without waffles and eggs? The waffle arrives ethereally light, fluffy yet delightfully crisp on the outermost layer –hands down one of the best waffles around.

Meats will not disappoint.

Most stunning is the Whole Roasted Baby Pig with Pomme Aligot (mashed potato) that dons a crisp crackling skin and yields tender juicy meat beneathe.

From the BBQ live station, diners can find ribs, meat skewers and gourmet sausages.

Accompanying the meats is a selection of grilled vegetables.

I hand-on-heart declare that The Knolls exhibits the (top 3) best prowess in the desert department in the Singapore’s brunch buffet directory.

Each and every dessert is presented with such finesse, it’s almost impossible to not stop and take a picture. I’ll just let the pictures do the talking.

Whiskey on the Rock

A particular dessert that left a huge impression was the Whiskey on the Rock. Unassuming it looks, hidden under the rocky exterior is a layer of dark chocolate and another of whiskey. It was just awe-inspiring beyond words.
